三種歐洲的用餐方式,可以放進同一個台北街角嗎?
Can three European ways of dining share one Taipei street corner?

原本密封的門面全部拆掉,換成符合法規的可開放式落地窗。深色木框、截角入口、暗紅遮陽棚、門檻鋪黑白花磚——這是十九世紀末巴黎街角餐酒館的標準配備。用它們不是為了懷舊,是因為那套做法本來就是為了讓一家店和一條街打招呼。
The sealed storefront was removed entirely and replaced with operable full-height glazing. Dark timber frames, a chamfered corner entrance, a deep burgundy awning, and a black-and-white tiled threshold — the standard vocabulary of a late-19th-century Parisian corner bistro. Not nostalgia: that vocabulary exists precisely to let a shop greet a street.

招牌是酒紅底,字用奶油白手繪,側邊掛一塊河狸的燈箱。遮陽棚壓得比一般低,把騎樓的高度收下來,人走到下面會自動放慢。門檻鋪黑白花磚,從室內一路延伸到人行道上,沒有在門口斷開。這條線是刻意的:店和街之間不做界線,只做過渡。
The sign is burgundy with hand-painted cream lettering, and a beaver lightbox hangs off the side. The awning sits lower than usual, pulling the arcade height down so people slow as they pass beneath it. The black-and-white floor tile begins inside and runs out onto the pavement without stopping at the door. That line is deliberate: no boundary between shop and street, only a transition.

主用餐區參照 1880 到 1910 年 Belle Époque 的巴黎餐酒館。人字拼木地板、深綠絨長卡座沿整面牆拉開、深色木框護牆板收邊。牆上掛的是那個年代的東西,大小不一,疊著掛;酒單寫在手繪黑板上,分 Rouges 和 Blancs 兩欄。這一區的邏輯是密度:東西多,但每一件都有年份,不是佈景。
The main dining room follows the Parisian bistro of 1880–1910. Herringbone timber flooring, a deep-green velvet banquette running the full wall, dark timber wainscot. The wall carries objects from that period, hung at mixed scales and overlapping; the wine list is chalked in two columns, Rouges and Blancs. The logic here is density — many things, each with a date. Not a stage set.

畫牆上最大的是黑貓海報,最小的是巴掌大的老相框,中間沒有一件對齊。這是 Belle Époque 餐酒館掛牆的方法:牆是長出來的,不是一次掛好的。酒單不印,寫在黑板上,Rouges 和 Blancs 分兩欄,換酒就擦掉重寫。牆上的東西固定,牆前面的東西每天在變。
The largest thing on the picture wall is a Chat Noir poster, the smallest a palm-sized frame, and nothing is aligned. This is how a Belle Époque bistro builds a wall: it accumulates rather than gets installed. The wine list is not printed but chalked, Rouges and Blancs in two columns, wiped and rewritten as the bottles change. The wall stays fixed. What happens in front of it changes daily.

吧檯是西班牙的。Barra 不是隔開廚房的界線,是廚師、侍酒師和客人共用的那張檯面。所以檯面壓米白石,淺色讓食物和酒站到前面;立面貼深綠馬賽克磁磚,配黃銅腳踏桿;吊杯架直接掛在頭上,酒瓶一整排排開。開放廚房不是為了展示,是為了讓坐在檯前的人接得到廚房的節奏。
The bar is Spanish. A barra is not the boundary that separates the kitchen — it is the counter shared by cook, sommelier and guest. Hence the off-white stone top, pale enough to let food and wine come forward; the deep-green mosaic front with a brass foot rail; the glass rack overhead and the bottles lined up in full view. The open kitchen is not display. It lets whoever sits at the counter pick up the kitchen's rhythm.

包廂是英式的。落地窗正對公園,這是全店唯一看得到綠的位置,也是唯一關得起來的位置。胡桃木長桌配皮革餐椅,一整面木作書牆收黑膠、唱片機、打字機、老時鐘與獎盾。倫敦私人會所的 Curated Wall 是這樣運作的:牆上的東西要有一個主題,房間才會有專屬感。這裡的主題是音樂。
The private room is English. Its full-height window faces the park — the only place in the house with a view of green, and the only one that closes. A walnut refectory table with leather chairs sits against a joinery wall holding vinyl, a turntable, a typewriter, clocks and shields. This is how a London club's curated wall works: the objects need a subject before the room can feel like it belongs to someone. Here the subject is music.

這套圖是為了讓東西可以在別的地方先做完,才那樣畫的。門面、吧檯、卡座、吊杯架、包廂書牆都拆成獨立物件,留在現場的只有包柱、牆板、隔間與天花包樑。所以圖上有兩種數字:木框斷面 0.4、鐵件收邊 TH:3mm、卡座四格各 97.5,這些寫死;門面總高 ±240、卡座總長 ±400 標成依現場回覆。內部結構與螺絲數量刻意不畫,圖上直接寫由工廠判斷。設計師畫完成面,工廠畫怎麼站得住——誤差不是不能有,是要先決定它發生在哪裡。
The drawing set was made so the pieces could be built somewhere else first. Shopfront, bar, banquette, glass rack and the private room’s joinery wall were each drawn as a separate object; only column casings, panelling, partitions and beam bulkheads stayed on site. So the sheets carry two kinds of number. Some are fixed: 4mm frame profiles, 3mm bronze trim, four banquette bays at 975mm each. Others are declared elastic: an overall shopfront height of ±2400, a banquette run of ±4000, confirmed on site. Internal structure and fixing counts are deliberately left undrawn — the sheets say the fabricator decides. The designer draws the finished face; the fabricator draws what holds it up. Tolerance is not the enemy. Deciding where it lands is the work.
